Pepperoni Garlic Knots
Stick of Pepperoni (or 1/2 lb sliced)
Olive oil, Salt, Pepp
1/3 Jarred minced garlic
1/2 cup of pecorino
handful of chopped of fresh parsley
3/4 cup of thickly shredded mozzarella
Buy a pizza dough from your favorite pizza place, the dough should have already went through the rising process so place into a bowl, cube up your pepperoni and start mixing into the dough to combine, then move to a flat surface and roll out into a rectangular shape, roll your pizza cutter to make long strips and then half those you should have ten strips. Take each strip cross either end pull through one side to tie into a knot, place all on a non stick cookie sheet and let bake for about 12 min (until see some browning). In the meantime in a large bowl mix together minced garlic, pecorino, and parsley. When the knots are done while still hot! toss into the mixture, add a sprinkle of and salt and pepp. Add to a smaller baking sheet so all the knots are touching/hugging together tightly in the pan. Add the shredded mozzarella and slice some pepperoni for topping, put back into the oven (or broiler) about 8-10min until the cheese is melty and the pepperoni is crispy. Cheese PULL UP and enjoy !
