Sweet Snow Gnocchi

Sweet Potato Gnocchi w Sautéed Kale

Ingredients:

Four small sweet potatoes

Two cups of flour (plus about 1/2 cup to work with)

2 tsp salt (for the flour) 

Olive oil (or any oil of you choose works)

2 cups of chopped kale

1/2 Tsp Rosemary

handful of chopped fresh parsley

3 cloves of garlic 

1  Tsp Nutmeg

Graded Parm (your call - alot)

Recipe:

Oven 400*

Place the potatoes on a baking sheet, poke a few holes so they don't explode and let them bake for about 45 min or until soft and can easily put a fork through them. Set them aside to cool.

Once cooled combine salt and flour, create a well on your work surface. Remove the skin and smash them into the middle of the well (flour your hands) Begin gradually mixing some flour into the sweet potato continue to incorporate until fully combined add flour as needed, the dough should be firm and not sticky.

Once ready roll into a ball cut about a 2 inch chunk and. roll out into a long snake thats about a half inch thick and then cut the pcs into 1 inch gnocchi's. After cut, toss into a bit of flour to prevent sticking and grab the back of a fork and gently roll the pc down it to create slight grooves. Either freeze (if freezing and layering them make sure to put parchment paper so they don stick and a little more sprinkling of flour) or use right away, boil a pot of salted water and drop the gnocchi's in for 2-3 min or until they rise to the top.

While cooking start a cast iron you want it to HOT ! add one. tbsp of olive oil, rosemary and chopped garlic. Let that brown, once gnocchi's are done drop them right into the cast iron and don't touch them you want them to get a golden crust for great texture. add fresh parsley. let cook about 5min. Then add chopped kale SALT+PEPP, nutmeg, drizzle of oil and a sprinkle of graded parm. Stir. let cook a few min until the kale is a bit wilted. Plate up and add more then a handful of parm! Sit in the snow and feel warmed!
